Fans are lining up for Mikono, Chicago’s first Greek froyo shop, as it goes from pop-up to permanent in Pilsen</u></b></a></p><p>While my frozen sweet treat consumption can never truly be described as “low,” it increases exponentially in the summer.
Luckily, a version of one of my favorite desserts from the early 2010s arrived just in time for the Chicago area’s latest heat wave.</p><p>After months of selling froyo out of their apartment and later hosting sold-out pop-ups all around the city, best friends Maya Matta and Nathalie Del Valle have officially opened the first brick-and-mortar home for their independent froyo brand Mikono.</p><p>Each 23, Del Valle and Matta have dipped into their savings and upgraded their equipment.
They made a nearly $15,000 investment, taxes and tariffs factored in, into an ice cream machine sourced from New Zealand.
So far, their gamble has been worth the risk, my colleague Ambar Colón reports.</p><p>They’re operating out of the kitchen at the Latina Sweat Project (949 W. 16th St.), a yoga studio offering classes in Pilates, dance and yoga.
The residency at the studio is open from 5 p.m. to 9 p.m.
Monday through Friday and 1 p.m. to 9 p.m. on weekends while the duo works on their permanent storefront, set to open in Lincoln Park later this fall.</p><p>“There are multiple Greek restaurants that serve Greek froyo as a dessert option, but we wanted to offer it in more variety,” Del Valle said.

A woman with cystic fibrosis received a ‘first of its kind’ quadruple-organ transplant at Northwestern</u></b></a></p><p>Elizabeth Wehrle was diagnosed with cystic fibrosis at age 11, a genetic disease that damages the lungs, digestive system and other organs.
She underwent a double lung transplant in 2017, but her health declined this year.</p><p>Doctors diagnosed the Iowa resident with a severe form of chronic rejection, meaning her body was attacking her transplanted lungs, and she was immediately hospitalized.
Doctors said the condition is often fatal and so high-risk that patients are rarely eligible for a second transplant.</p><p>But a team of doctors at Northwestern Memorial Hospital said they were determined to give the 36-year-old another chance at life, my colleague Cindy Hernandez reports.</p><p>They came up with a plan, and in March, Wehrle underwent a second transplant surgery for more than eight hours.
This time, surgeons transplanted two lungs, a liver and a kidney.</p><p>Wehrle said her health journey has given her a new perspective on life.
After her first transplant surgery, she said she was determined to live life to the fullest.
But over time, she found herself living as though her future was guaranteed.
Now, she said she will never take life for granted. A white-bellied pangolin was born at Brookfield Zoo Chicago</u></b></a></p><p>Born June 8 to mother Virginia, the pup has already hit important milestones in her development, such as nursing and exploring the nest box on her own.
The so-far-unnamed critter is taking part in one pangolin privilege: riding on Mom’s tail.</p><p>White-bellied pangolins are native to central and west Africa, but there are seven other pangolin species spread across Africa and Asia.
All are under threat of extinction because of trafficking and loss of habitat.
